About Corzetti
Do you all know about a food called Corzetti??
(They are sold at places like Dean & Deluca!)
"Looks like a sealing stamp"
"Looks like cookie dough before baking"
From its appearance, I think there are various impressions, but... in fact, this Corzetti is truly pasta!♡
Corzetti is a flat, round pasta with a diameter of 5 to 7 cm that originated in the Liguria region in northwestern Italy.
In authentic Italy, a special wooden stamp is used to imprint family crests or shop logos on the surface.*
In ancient Europe, it is said that during weddings, pasta made with family crests was served,
and when meals were served to the public on holidays, noble or clan emblems were stamped as a symbol of power.
In Japan, it is not very familiar, but it is a very rare and stylish embossed pasta that is different from regular noodle types, and looks delicious!♡
(Especially seems to go well with dishes like pescatore)
How to make it??
Making Corzetti seems like a high hurdle and looks difficult since you have to make the dough from scratch!
However, once you make the dough, all you have to do is roll it flat, shape it into circles, and stamp it.♩
Then you just boil it.
You can also use cookie cutters for the shaping!
