Kombu was born as the eldest son of "Kombuya Sōhei," a wagashi shop with a 230-year history in Fukui Prefecture. It’s shocking to think that the eldest son of a traditional wagashi shop is making French pastries...!

After acquiring the basics of French pastry, Kombu joined Pierre Hermé. In Paris, he was in charge of desserts at the two-star restaurant "L'Atelier de Joël Robuchon," before joining Un Grain and becoming the chef patissier in just four years*
