Must-Visit Confectionery Store in Kyoto: 'RAU'
Kyoto, a city known for its sweets.
Kyoto is filled with long-established wagashi (Japanese sweets) shops and trendy cafes, making it a dream destination for sweet lovers ♡
Today, I will introduce a shop that I particularly want to visit.
It’s a sweets lab called 'RAU' located in Kawaramachi.
Not a café, nor a patisserie, but a sweets lab.
You might be wondering what that means.
'RAU' is a place where uniquely talented young pâtissiers challenge themselves to create new confections.
They are aiming for a completely new form, not just with the sweets themselves, but also with the displays ♡
Cakes That Aren't in Glass Cases ♡
Typically, in a patisserie, cakes are lined up in a glass case for you to choose from.
In contrast, 'RAU' has a quite different display style.
Sweets are laid out on a counter shaped like their logo, viewable from 360 degrees.
It feels more like an art museum than a confectionery shop ♡
Each sweet seems like a piece of art.
The Unique Cakes of 'RAU' ♡
Of course, the cakes are also innovative and unlike any you've met before, found only at 'RAU'. Here, sweets are referred to as desserts.
This is a commitment from a chef-pâtissier who previously operated a specialist 'assiette dessert' shop in Kagurazaka, Tokyo.
This dessert is inspired by a snowy mountain landscape with clouds.
When you cut into it, creamy chestnut and rich praline sauce flow out ♡
The clouds on the mountaintop are made of light cream flavored with vanilla and tonka beans.
This dessert is themed around black beer!
Fluffy, three-dimensional foam is recreated here.

Caramelized nuts and dried fruits ooze out from inside ♡
The foam on top is made from white beer and the glass portion is mousse made with black beer.
The mousse expresses the feeling of beer by increasing its moisture content to the extreme to create a fizzy sensation.
This dessert carefully blends the sourness, aroma, and bitterness of a whole lemon into a single dish ♡
The main mousse contains plenty of lemon juice, and it's filled with confit that retains the texture of lemon peels.
To express both ripe great flavor and fresh taste, two types of confit are used with different cutting sizes and cooking methods.
Each dessert from 'RAU' is filled with meticulous attention to detail.
Even if I can't go to Kyoto, I want to try these…!

'RAU's Cream Sand "Nami-Nami"
Here it is!
The cream sand "Nami-Nami," consisting of wave-shaped sablé sandwiching three types of cream and rich chocolate ♡
The wave-shaped sablé is inspired by the red roof tiles of French streets and the roof tiles of Kyoto.
It was born as a new type of sweet that no one has ever seen.
Between the wave-shaped sablés of plain, chocolate, and sesame, three types of cream and rich chocolate are sandwiched.
The creams are praline, chocolate, and matcha.
The chocolate is homemade bean-to-bar chocolate made from cacao beans onsite at 'RAU.'
'Nami-Nami' boasts a unique visual and flavor that combines French and Kyoto elements.

With a shelf life of two weeks, it's perfect for gifts too.
